Intro The goal behind Robin to the Rescue is simple: to give you a variety of strategies for getting weeknight meals to the table without fussing, stressing, or spending a lot of time doing it. The recipes in this book are easy and fast, using everyday ingredients in delicious, nutritious, and time-efficient ways. I also realize that for busy home cooks every day is busy in a different way. For that reason, I've taken the recipes in this book one step further, giving you alternative prep options for every single one. Take Italian Braised Beef over Egg Noodles (page 170), which is ready in about 35 minutes. But what if you're going to be out all day, either at work or running errands, and want dinner on the table as soon as you get home? Well, you can also make this delicious dish in the slow cooker, in 4 hours on HIGH or 6 to 8 hours on LOW, whatever best suits your schedule. You can also make a Meal Kit of it, so, with just a little pre-prep, you can have a dinner on the table in 5 minutes. Robin to the Rescue is all about helping you get good food on the table with the least amount of effort in the way that makes the most sense to you and your family.
Here's a rundown on the mealtime strategies and meal-planning features you'll find in Robin to the Rescue:
Make It Meal Kit: Meal Kits are partially prepped and assembled meals that you start in advance and finish later. The beauty of a Meal Kit is that you prepare it when you've got a little extra time (say, when you're making dinner on the weekend). When you're ready to finish the meal (say, Monday at 6 p.m. when everyone's starved and cranky!), you simply pick up where you left off, without having to spend any extra time dicing, slicing, sautéing, waiting for water to boil, and so on. Items in a Meal Kit typically include:
- pre-chopped vegetables (in some cases, pre-roasted or pre-sautéed vegetables)
- coated or crusted chicken breasts or turkey tenderloin
- marinated beef or pork
- pre-cooked rice or pasta
- prepared sauces, vinaigrettes, glazes, or dips
I will show you how to start the meal and then package it so that it lasts until you're ready to complete it (either in the fridge or freezer or on the countertop). Thanks to the Meal Kit strategy, by starting a recipe in advance, you can finish it later in about 20 minutes or less--sometimes in just 5 minutes! Imagine this: you can race home after work on Tuesday and enjoy Seared Almond-Crusted Chicken with Baby Corn & Tomatoes (page 84) in just minutes because it's ready and waiting in your refrigerator. Or how about Beef & Mushroom Tart (page 161) on Wednesday? Or Clams Rockefeller (page 203) for your Friday night guests? With a Meal Kit, a little bit of pre-planning will reap delicious, quick results.
Bank a Batch: My philosophy of 'do it once, enjoy it twice' plays out in my Bank a Batch strategy. When you're making a dish, double the recipe and pop the extra meal in the fridge or freezer to be pulled out when you've got to get dinner on the table immediately. Banked meals are ideal for those days when you clearly have no time to make dinner, even if you have a Meal Kit stashed in the refrigerator. When you're time-starved (and the rest of the family is plain-old 'starved'), you can just pull a banked meal from the freezer, defrost it in the microwave, and serve up a fabulous, homemade meal in no time. Yes, lasagna is an outstanding freezer staple, but imagine stocking your ice box with Thai Chicken & Noodles (page 94), Orange-Garlic Shrimp (page 213), and Chipotle Pork Soft Tacos (page 144). Nothing's better than money (or meals!) in the bank!
Slow Cook It: There's no doubt about it--the slow cooker is a Quick Fix cook's ally in the kitchen. In this book, I will show you how to take a stovetop meal and transform it into a slow-cooked one for those days when you know you're going to be out of the house for most of the day. Simply load up the slow cooker in the morning, turn it on, and get on with your day. When you're finished working and/or running errands, you'll come home to a family-friendly, mouthwatering meal, hot out of the slow cooker.
Morph It: Morphing means to take a recipe (or part of the recipe) that you're already making, double it, and transform the extras into an entirely different meal. My attitude is, if I'm going to cook a dish, I'd like to get more than one night out of it! That doesn't mean I want to make turkey melts with my leftover turkey (although those are yummy too). Instead, I can turn my Cereal-Crusted Chicken with Curry Cream (page 92) into Warm Chicken-Cherry Waldorf in Romaine (page 90), or Filet Mignon with Spicy Remoulade (page 178) into Warm Steak & Penne Salad with Tomato Soup French Dressing (page 194). Cook once, enjoy the payoff for many meals to come.
Have It Your Way: Have it Your Way allows you to take a recipe you love and enjoy it a different way by switching up the ingredients. For example, swap broccoli for green beans in Roasted Green Beans with Grape Tomatoes & Olives (page 242) or turn the roasted tomato-olive mixture from the same recipe into a delicious pasta sauce. Or substitute chicken for beef in the Moroccan Beef Stew (page 172). You can also create vegetarian meals, such as replacing chicken with tofu in Chicken with Eggplant, Capers & Black Olives (page 86). There are no hard and fast rules with my recipes; I just want you to have fun and enjoy every minute and every bite.
5 Ingredients or Less: In Robin to the Rescue you're going to find a lot of recipes that call for 5 ingredients or less. (Remember, when counting the number of ingredients, salt, pepper, olive oil, and water don't count. I assume you have those on hand.) For a full list of them, check out pages 305-306. Fewer ingredients means less prep but not less flavor--enjoy Baked Chicken with Green Spinach & Horseradish Sauce (page 112), Roasted Garlic-Artichoke Dip (page 28), and Pork Tenderloin with Strawberry Glaze (page 142).
The Quick Fix Recipe Index: Starting on page 302 you'll find a recipe index organized so you see at a glance which recipes require 5 ingredients or less and which you can Meal Kit, Bank a Batch of, Slow Cook, or Morph. In addition, to give you even more options, I've indexed all the sauces, glazes, marinades, vinaigrettes, dressings, and dips used in my recipes so you can access them fast if you're looking for a new way to prepare chicken, or fish, or beef, or whatever it is you have taste for. So, for example, by checking the index, you'll find out that the Honey-Sesame Dressing in Turkey & Spinach Salad with Strawberries, Kiwi & Cashews (page 128) makes an excellent marinade for grilled shrimp, salmon, or roasted chicken breasts. Or that instead of topping pan-seared chicken with Artichoke-Basil Pesto (page 114), you can fold the pesto into cooked pasta or spoon it over roasted salmon. One sauce, multiple uses--that's the key to the Quick Fix way of cooking.Basically, I've tried to make this book as versatile, flexible, and useful as possible for people who want to enjoy wonderful, fresh food in a new way every day.
